
Lobio with adjika
Description
Debating whether this is the "correct" lobio could go on forever, if only because the word "lobio" itself translates from Georgian as "beans." Consequently, in Georgia, the word "lobio" refers to practically all dishes where beans play the main role. I am offering you my version of this dish—lobio with adjika. The recipe is authentic, shared with me by my good Georgian friend, Teymuraz. This particular version is traditional in his family. Serve lobio with adjika hot, preferably with Georgian mchadi bread. Step 1

First of all, soak the beans in cold water for 2 hours. Then drain the beans, put them into a pot, add bay leaf and 2 liters of water. Cook over medium heat until the beans become soft.

Remove the beans from the heat. Drain the water, but reserve about 300 ml of the cooking liquid—it will be useful later. For now, mix the beans, salt, and butter in a bowl.

Mash into a puree using a potato masher or mortar.

Fry coarsely chopped onion until golden brown.

Mix the crushed beans, adjika, fried onion, and ground hot pepper.

Add 300 ml of the water in which the beans were boiled. Mix well.

Add spices, chopped fresh parsley, and minced garlic. Mix until uniform.

Place the lobio over medium heat and warm for 4-5 minutes (you can use the oven or the stovetop). Serve immediately, while hot.
