
Lobio with Green Beans and Egg
Description
This appetizer is quick and easy to prepare. Lobio can be made in different ways. This time I decided to try diversifying the dish with egg and tomatoes. The preparation principle for the appetizer remains the same. When serving, don't forget to garnish with herbs, and while cooking, add Georgian spices to taste. Serve with herbs and sauce.

1. We will need simple and affordable ingredients to prepare this dish.

2. Carefully sort and clean the beans. Remove all tough ends and trim the asparagus. Cover with water or broth and bring to a boil. Cover with a lid and simmer over low heat.

3. After 10 minutes, add finely chopped yellow onion. Season with salt and pepper to taste, and add the spices. Spices for Georgian dishes pair very well with this dish.

4. Cover with a lid and simmer for another 10 minutes over low heat. Stir occasionally.

5. After 5 minutes, add clarified butter and stir the beans.

6. While the beans are simmering, dice the tomatoes. Simmer the asparagus with the vegetables until tender.

7. Take 2–3 eggs and beat them. You can do this with a regular fork or a whisk.

8. Pour the egg mixture over the beans with vegetables, braise while stirring constantly. Then cover with a lid and cook until done.

9. You will know the dish is ready when the broth has completely evaporated. I usually cook green bean lobio with egg at home in a skillet.
