Description

The recipe won't take much time. Lobio is a traditional dish representing Georgian cuisine. It is prepared not only in restaurants across Georgia but also all around the world. There are many recipes for its preparation, allowing everyone to choose the one that suits them best. It can be made with red, regular, or string beans. To achieve its characteristic aroma and spicy flavor, walnuts, pomegranate, and various spices and herbs are usually added. Serve hot.

    1. First, prepare the red beans: soak them for several hours in cold water, preferably overnight, then boil until fully cooked. Mash the cooked beans slightly with a spoon.

    2. Clean and wash the meat, cut into small pieces, and transfer to a deep skillet. Pour in water and simmer for 25 minutes. Then dice the onion and add it to the meat. Continue simmering until the meat is fully cooked.

    3. Blanch the tomatoes, then cut them into cubes. Peel and wash the garlic, then cut into small pieces. Wash and chop the herbs, add everything to the meat, and simmer for another 10–15 minutes.

    4. At the very end, add the boiled beans and cook for another 5-7 minutes. Season with salt to taste. Turn off the heat, cover with a lid, let it steep for another 20 minutes, then the dish is ready!
