In fact, bean lobio is like "oil is oily," since the word "lobio" translates from Georgian as "beans." In Georgia, lobio is a traditional appetizer, served hot in some families and cold in others. The ingredients are purely Georgian—beans, cilantro, garlic, and tomato sauce. The result is savory and slightly spicy.
