Description

Lobiani is a typical Georgian dish; my good acquaintance, a real Georgian, Teimuraz from Kutaisi, taught me how to make it. Nominally lobiani is an appetizer, though in how filling it is, lobiani is no less satisfying than many hot dishes (beans, after all). An important point: if you skip the spices—or rather, cilantro—you will get not lobiani but who knows what. Cilantro is the key ingredient of this dish, so please take the trouble to add it to the flatbreads. Then you will have lobiani like in the best homes of Kutaisi :) It can be served with tea or coffee.

    The beans need to be soaked in water overnight.

    Dissolve the yeast in warm kefir, then add the salt, sugar, and egg to the same bowl. Mix thoroughly. At the same time, put the beans on to cook (drain the water they were soaked in—you need to cook them in fresh, clean water)—they will cook for about 1.5–2 hours (check doneness by tasting).

    Mash the cooked beans with a little of the water they were cooked in until the mixture is the consistency of a purée, then mix with onion, butter, and finely chopped cilantro. Season with salt to taste.

    Now divide the dough into 8 pieces and roll each into a small circle (about 15 cm in diameter). Place a couple of spoonfuls of filling in the centre of each circle and carefully pinch the dough from the edges toward the centre to form a ball.

    Now roll each ball very carefully into a flat disk—so the dough does not tear and the filling stays inside. Do not roll it too thin; aim for a thickness of about 1.5–2 cm.

    Heat a small amount of vegetable oil in a frying pan. Fry the flatbread in the pan for about 2–3 minutes on each side, until golden brown. Brush the hot lobiani with butter. Done! They can be served warm or cold.
