
Lulya kebab on a grill pan
Description
To prepare lulya kebabs on a grill pan, we will need minced meat—preferably a mix of pork and beef in equal parts. You can also add tail fat, but this time I found the mixture fatty enough as it was. I also recommend sprinkling the minced meat with lemon juice. Among the spices, I especially recommend cumin—on the East, it is traditionally added to meat appetizers. When frying on a grill pan, I decided to remove the skewers from the kebabs; it turns out to be more convenient.

Rinse the meat and cut into medium-sized pieces. Finely chop the onion and garlic as well.

Grind through a meat grinder several times.

Add the onion, spices, and mix well. You can also beat the meat mixture.

Shape the kebabs and refrigerate for about an hour.

Sear on a hot grill pan with a small amount of oil until cooked through, turning occasionally. Serve the ready kofta kebab from the grill pan with lavash or fresh bread, drizzled with lemon juice.
