
Lulya kebab on skewers
Description
The dish is prepared without unnecessary complications. Let's make delicious and juicy lyulya-kebab! There's one important detail: add very, very finely chopped onion to the mixture of minced meat and fat. Do not make your task easier by passing the onion through a meat grinder, grating it on a grater, or blending it in a blender under any circumstances! The point is that the onion pieces should remain dry and release their juice inside the minced meat mixture only during cooking. If the onion juice gets into the meat mixture beforehand, it will simply soften the mixture, and you won't be able to make the meat hold together on the skewer. My recipe isn't traditional, but I liked it the first time I tried it, and I've been preparing it this way ever since. You should try it too! Let's get started. The ready dish can now be served.

Prepare the ingredients. Grind the chilled meat and fat using a meat grinder.

Peel the onion and finely chop it with a knife. Add to the mince.

Add the spices, grinding the coriander well in a mortar beforehand.

Mix the meat thoroughly by hand for at least 10 minutes until it becomes elastic. Cover with plastic wrap and refrigerate for 2–3 hours to let the fat (pork fatback) solidify.

Light the barbecue and wait until the wood burns down. Take wide skewers and divide the minced meat into 5-6 portions; I made large ones, so I divided it into 5. Thread the minced meat onto the skewers. To do this, take a portion the size of a tennis ball and spread it along the skewer with your hands to form sausage-shaped patties about 3-3.5 cm thick. Make sure to press the ends firmly against the skewers.

Move the large coals to one side — this will be the hot zone, while the smaller coals form the warm zone. Place the skewers first into the hot zone to form a crust. We need the skewer itself not to heat up yet, while the meat patties have already seared, so they hold their shape and don't fall apart. Then move them to the warm zone, where they will finish cooking. Be sure to frequently turn the skewers to prevent burning. The entire process will take you about 10 minutes.

For serving, prepare lavash bread, which I tried to bake to the same size as the skewers of lyulya kebab, marinated onions, plenty of fresh herbs, and tomato sauce. Take the skewer in your hand, wrap it with lavash, and slide the meat off the skewer. Add onions, sauce, and enjoy!
