Prepare the listed ingredients. Use spices to your taste; it's better to buy a spice bouquet.

Rinse the beef under water and pat dry with paper towels. Trim off tendons and membranes, finely chop and mince with a sharp knife. Place the minced meat into a deep container.

Peel and rinse the onion, then finely chop or grate it on a fine grater directly into the ground beef. Add all the spices and seasonings. Knead the meat mixture thoroughly, squeezing your hand into a fist and pressing the meat into the bowl. All pieces of the mixture should bind together.

Form small oval patties from the minced meat and thread them onto skewers. Shish kebabs can be grilled on skewers, baked in the oven, or quickly fried in a pan.
