Lulya kebab
Description
The dish is prepared without unnecessary complications. In our version, lyulya-kebab is made not only from lamb, but also from beef, and even pork. Lyulya-kebab is quite unlike an ordinary patty; the recipe includes only minced meat, onion, and spices. No eggs or bread are added. The stickiness of the mince is achieved by prolonged and vigorous mixing, turning the meat and onion into a uniform, sticky mass. By the way, it's essential to use plenty of onion when preparing lyulya-kebab, as it's the onion that gives the patties their juiciness and distinctive aroma. Today I want to share with you my recipe. The finished dish can be served at once.

Step 1

1. Prepare all the necessary ingredients. I always use homemade minced meat, not store-bought. Very important: the meat for lyulya-kebab must be fairly fatty so that the finished dish is not dry, but sufficiently juicy.

Step 2

2. Grind the meat using a meat grinder. Peel the onion and also pass it through the meat grinder.

Step 3

3. Mix the meat with the onion, add the necessary amount of salt and pepper. Knead the meat mixture by hand for 8-10 minutes until a sticky mass forms.

Step 4

4. For making lyulya-kebab, you will need small thin skewers. If you don't have any and are cooking the dish in the oven, you can use long wooden skewers or even chopsticks. Shape the minced meat into elongated, thin sausages, thread them onto the sticks, and place them on a baking tray. Bake the lyulya-kebab in the oven at 180°C for 30 minutes.
