Description
The dish is prepared without unnecessary complications. Preheat the oven to 200 degrees. Cook the rice according to the package instructions. Cover with a lid and set aside. While the rice is cooking, heat 1 tablespoon of oil in a large skillet over medium heat. Add the onion and garlic, season with salt and pepper. Cook, stirring, until the onion begins to soften, for 5 to 7 minutes. Add the tomatoes with their juice, olives, and capers, and cook, stirring, until the mixture thickens, for 3 to 5 minutes. Meanwhile, place the snapper fillets on a baking sheet. Drizzle the fish with the remaining tablespoon of oil. Arrange the fillets in a single layer, skin side down. Season with salt and pepper. Bake for 10 to 12 minutes. Serve with rice and sauce. The finished dish is ready to be served.
