
Chanterelles with potatoes in a cauldron

1. First, deal with the mushrooms. Rinse them thoroughly under running water several times, then place them in a pot, add water, and boil over heat for about 12–15 minutes. Then drain the water and transfer the mushrooms to a colander.

2. While the mushrooms are draining, you can prepare the potatoes. They need to be washed and peeled.

4. Meanwhile, heat the cauldron with oil. For this recipe of cooking chanterelles with potatoes in a cauldron, you can use either vegetable or clarified butter.

5. Peel the onion and cut into small cubes. Put it in the cauldron first and fry until golden brown.

7. Cook the mushrooms over low heat for about 15 minutes. Then add the potatoes, mixing gently. Pour in the water in which the mushrooms were boiled, and simmer over low heat.

8. About 5 minutes before readiness, add salt, pepper to taste, and pour in the cream into the pot. Mix gently. When the chanterelles with potatoes in the pot are ready, they can be served, for example, sprinkled with fresh herbs.
