
Chanterelles fried with potatoes
Description
The recipe won't take much time. To emphasize the mushroom flavor and aroma, don't forget the onion. Its fine chop will develop a slight sweetness when fried, allowing the mushrooms to shine more vividly. First, sauté the potatoes, as they are the densest ingredient. Then add the onion and cook for another 3–4 minutes before adding the mushrooms. The mushrooms should be finely chopped so that all ingredients cook evenly. Serve hot.

Prepare the listed ingredients. Peel the potatoes and rinse them under water. Peel the onion, rinse it, and cut it in half—you will need only half of the onion. Rinse the chanterelles and gently squeeze out excess moisture.

Cut each root vegetable in half and slice the halves thinly. Place in a bowl or salad bowl, add salt, and mix. The salt will draw out moisture from the slices, making the potatoes crispy and fried.

Heat vegetable oil in a skillet and add the sliced potatoes. Immediately stir to coat all pieces with oil. Fry for 3 minutes, then stir. Fry for another 3–4 minutes until the bottom layer is golden brown, then stir again. Fry for an additional 3–4 minutes.

Meanwhile, chop half an onion into small cubes and add it to the potatoes along with ground black pepper. Add other herbs and spices to taste, as long as they don't overpower the mushroom flavor. Mix well and sauté for another 3–4 minutes.

Reduce the heat to medium and slice the chanterelles. Add them to the pan and stir, ensuring the sliced mushrooms end up at the bottom of the pan, beneath the layer of potatoes. At this stage, cover the pan with a lid. It's important that there are fewer mushrooms than potatoes; this way, the liquid they release will evaporate properly and the potatoes won't become soggy.

Sauté the chanterelles with the potatoes for another 5-8 minutes, stirring occasionally, then turn off the heat. The dish is completely ready!
