
Sticky buns
Description
Tasty pastries for the whole family. Sticky buns with orange filling–glaze always turn out wonderfully delicious and aromatic. While they bake, the aroma will simply be magical. Buns like these are perfect for a family tea party on a day off.

Step 1

Prepare all necessary ingredients in advance. Take the eggs and butter out of the refrigerator ahead of time so they reach room temperature. Warm the milk to about 30–35°C; it must not be hot. If you like, you can substitute dry yeast with fresh compressed yeast, but the order of steps will then be slightly different.

Sift the flour into a large bowl, add the dry yeast, and mix.

In a separate bowl, beat the eggs with sugar. Adjust the amount of sugar to your taste; I like moderately sweet buns, so I add a little more than half a cup of sugar.

Add the egg mixture to the flour with yeast, pour in the milk, and add softened butter. Mix everything and knead a soft dough. It should stick slightly to your hands. Cover the dough with a cloth and place it in a warm spot to rise. The temperature should be about 30°C; you can put the dough near a turned-on burner, on the open door of a preheated oven, or transfer it to a multicooker and turn on the special dough proofing mode.

While the dough is rising, prepare the orange filling. Mix the butter and honey with the cinnamon; squeeze the juice from one orange and grate the zest off it.

Mix everything together. To help the butter distribute evenly, warm the mixture in a double boiler or in the microwave.

Meanwhile the dough has risen; if you have time, you can punch it down once more and leave it for about 15 minutes, or you can start shaping the buns right away.

For baking the buns it is better to use a deeper pan, because the buns should rise upward rather than spread outward. I use a small non-stick saucepan about 23 by 23 cm. Generously grease the bottom and sides of the pan with half of the prepared filling.

Roll the dough into a large sheet just under 1 cm thick.

Spread the dough with the orange filling, leaving one edge uncovered.

Roll the dough up into a tight roll.

Cut the roll into 3–4 cm wide slices. Place them in the baking dish cut side up.

Bake the buns in the oven at 180°C for about 30–35 minutes.

Turn the baked buns upside down while the orange filling is still hot—it will run over every bun and coat them like a glaze.
