
Linguine with green pea sauce
Description
The sauce in this recipe is the well-known Pesto sauce, enhanced with fresh green peas. The pasta goes well with basil or mint leaves. Its pleasant green color is appetizing. The prepared sauce can also be spread on crispy slices of bread.

1. Toast the pine nuts and let them cool. Mince the garlic. Prepare a bowl with ice water. In a medium saucepan, bring slightly salted water to a boil. Add the peas and cook for 2 minutes. Drain the water and transfer the peas into the bowl with ice water, then drain again. Set aside 1/2 cup of the cooked peas.

2. Blend the remaining peas in a food processor with garlic, pine nuts, 1/3 cup grated Parmesan cheese, and salt until smooth, about 2 to 3 minutes.

3. Gradually pour in the olive oil and mix. In a large pot of salted water, cook the linguine pasta according to the package instructions. Reserve about two cups of the pasta cooking liquid, then drain the remaining water and return the pasta to the pot.

4. Mix the pasta with the prepared sauce, add the required amount of liquid to achieve the desired consistency, and cook over medium heat for 1 minute. Season with salt to taste and add ground black pepper if desired. Serve immediately, sprinkled with chopped basil or mint leaves if preferred, along with the remaining grated Parmesan cheese.
