
Linguine with tomatoes and herbs
Description
The recipe won't take much time. A complex blend of fresh herbs and sweet tomatoes combined with creamy cheese makes this pasta delightful. Serve it with a glass of red wine. To make the dish more vibrant, use tomatoes of different colors. Serve hot.

Step 1

1. Finely chop the shallot. Chop parsley, dill, tarragon, and thyme. Slice the tomatoes into pieces. Bring salted water to a boil in a large pot. When the water boils, add the pasta and cook until done, following the package instructions. Drain the water, reserving a little of the pasta cooking liquid.

2. While the pasta is cooking, place the sliced goat cheese on a plate. Add the cooked pasta to the plate. In a medium skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

3. Add white wine and cook until some of the liquid evaporates, about 2 minutes. Add parsley, dill, tarragon, and thyme.

4. Add the herb mixture to the pasta, season with pepper to taste, and stir for 1 minute.

5. Add the tomatoes and gently stir for another minute. Season with salt and pepper to taste and serve immediately.
