Description

Delicious pastries for the whole family. Linecké těsto (shortcrust pastry) is the base for many Christmas and New Year cookies in the Czech Republic and Slovakia. Vanilla stars, Linecké horns, rings, and many others. Housewives start baking long before the holidays, and they bake in large quantities! Baked goods made from this dough can be stored in tin cans for about a month. Recipe. Serve warm or chilled. Perfect with tea.

    Prepare the necessary ingredients. Take the butter out of the refrigerator in advance.

    Sift flour, powdered sugar, and vanilla into a bowl. Add the egg yolk and butter cut into pieces.

    Knead a soft dough that does not stick to your hands. Wrap it in plastic wrap and refrigerate for 30 minutes.

    Preheat the oven to 180 degrees. Roll out the dough on parchment paper into a 3 mm thick sheet and cut out the cookies. Half of them should be solid rounds, and the other half should have a hole in the center. I used the lid from a 5-liter plastic container to cut the rounds and a fondant cutter for the holes. You can also use a plastic bottle cap to shape the rings. Bake in the preheated oven for 8 minutes. The cookies are very thin and bake VERY quickly! Keep an eye on your oven. Let the cookies cool completely after baking.

    For the filling, I used homemade apple fruit leather and cut out circles the same size as the cookie bases.

    You can use thick jam. Take a teaspoon of jam, spread it on a whole round biscuit, and place on top a biscuit with a hole. Press gently—the cookies are fragile! Store in a tin can and let them rest. Shortbread cookies taste much better the next day.
