Bream baked with onion and carrots

Description

Got a large weatherfish? Don't feel like frying it, and a holiday is coming up? I suggest baking the weatherfish with a delicious stuffing. The dish will turn out very tasty, juicy, and aromatic. Serve it on a large platter—it will definitely be a highlight of your festive table. When I prepare this dish, my guests always eat the stuffing from the fish's belly first (so don't skimp on the onion and carrots).

    1. First, clean the tench from its innards, cut off the head and fins. Do not scale the tench! Rinse thoroughly and dry.

    2. My fish is large, so make shallow cuts along the back. Sprinkle the inside of the fish with lemon juice, and season both the outside and inside with a mixture of salt (about 2/3 teaspoon), pepper, and fish spice blend. Let the fish marinate for at least a couple of hours.

    3. Peel the onion and carrot. Cut the onion into quarter-rings and grate the carrot on a coarse grater. As you can see, I have almost equal amounts of carrot and onion.

    4. Heat a frying pan with vegetable oil over medium heat, then simmer the onion and carrot under a lid. When they become soft, add salt, ground pepper, and basil. Cook until done, trying to evaporate as much liquid as possible.

    5. The bream has marinated, and the onion and carrots have cooled down. Add a spoonful of mayonnaise to the vegetable mixture and mix well.

    6. Place the pike-perch on a sheet of parchment paper and fill with onion and carrot.

    7. Transfer the fish to a baking sheet lined with another sheet of parchment paper (so you won't have to wash the baking sheet afterwards :). Secure the edges of the first parchment sheet to prevent the juices from leaking during baking.

    8. Brush the dish with mayonnaise and place it in a preheated oven at 200 degrees.

    9. And here, after just over an hour, our bream looks like this. The smell is magical!
