
Preserved Lemons

A simple way to stock up ahead of time. I'm sure you've preserved all sorts of things, but never lemons. And that's a shame. Preserved lemons are an excellent ingredient for various desserts and baked goods; at the same time, you can add them to hot dishes as well. And as for how good they are with cognac as a snack—words can't do it justice :) So, here's how to preserve lemons. Store in a cool, dark place.

Sterilize the jars. Then wash the lemons thoroughly and trim off the ends so the top and bottom are flat.

Score the lemon crosswise (in an X shape), but do not cut all the way through.

Cut open the lemon and place approximately half a tablespoon of salt inside.

Do the same with all the remaining lemons. Pack the lemons tightly in the jar, add another tablespoon of salt. Press the lemons firmly with a pestle so they release their juice.

Press the lemons until the juice almost fills the jar. If there isn’t enough juice, squeeze more lemon juice separately and pour it into the jar. Seal the jar and store at room temperature for 1 week, then refrigerate and keep for as long as you like.
