
Lemon tiramisu
Description
The recipe won't take much time. The highlight of this tiramisu version is the lemon curd, so we'll prepare it first. Cook the curd over low heat, stirring constantly to prevent the eggs from curdling. Then prepare the cookie soak and the whipped cream. Now all that's left is to assemble the dessert and chill. Serve chilled.

Prepare all the necessary ingredients.

First, prepare the lemon curd. To do this, whisk 2 eggs with 70 g of sugar.

Then add the juice of two lemons and butter.

Place the saucepan over medium heat and, stirring constantly, reduce the mixture until it reaches a thick cream consistency. Let the resulting lemon curd cool, covering it with plastic wrap pressed directly onto the surface of the cream.

Now prepare the lemon syrup. Add 110 g of sugar to the water and gently heat until the sugar dissolves.

Add the juice of one lemon to the water with sugar. Cool the syrup.

Whip the cream with powdered sugar.

Add 100 g of chilled lemon curd to the whipped cream and mix.

Then add the mascarpone and gently mix.

Now assemble the dessert. For serving, I chose 250 ml parfait glasses. Break the cookies into pieces, dip them in the lemon soak, and place them at the bottom of the glass. Add a couple of spoons of lemon curd on top, followed by the mascarpone cream. Repeat the layers.

Decorate the top of the finished dessert with white chocolate and lemon zest. Refrigerate the tiramisu for 3-4 hours.
