
Lemon mousse with blackberries
Description
In a small bowl, mix lemon juice and 1/4 cup cold water. Sprinkle gelatin over the top and let stand for 2 minutes. Fill a larger bowl with ice water. In a small saucepan, combine the gelatin mixture, sugar, and a pinch of salt. Cook over medium heat, stirring, until gelatin and sugar dissolve, about 4 minutes. Pour the mixture into the small bowl and place it in the larger bowl with ice water. Stir until the mixture reaches room temperature, about 1 minute. In a large bowl, whip the cream. Add the cooled gelatin mixture to the whipped cream and stir gently with a whisk. Divide the mousse equally among four serving glasses and refrigerate for 10 minutes. Serve the mousse with blackberries. To prepare this dessert ahead of time, reduce the amount of gelatin by 1 1/2 teaspoons and refrigerate the mousse for 1 1/2 hours.
