Lemon curd

Description

From this amount of ingredients, I ended up with 300 ml of curd. In this recipe, use only egg yolks (from large eggs); the egg whites can be saved for another recipe or frozen. You can use either cornstarch or potato starch. Choose medium-sized lemons; if the lemons are very small, it's better to use three instead of two. The recipe is very simple, so I don't think you'll have any questions during the process.

    It's very convenient to prepare all the ingredients in advance. Thoroughly wash the surface of the lemons and dry them with paper towels.

    Grate the zest from two lemons using a fine grater, and squeeze the juice from them (straining out the seeds). You should get approximately 150 ml of juice. If you get slightly less juice, add water to reach the required volume.

    Pour lemon juice into a saucepan and add all the zest.

    To these ingredients, add sugar and starch.

    Whisk everything thoroughly with a whisk until there are no lumps left.

    Place the saucepan over low heat and, stirring constantly with a whisk, bring the mixture to a boil. Remove the saucepan from the heat – the lemon mixture will have thickened noticeably.

    Separate the yolks from the whites of three large eggs into two separate bowls. Beat the yolks well with a whisk until smooth and homogeneous.

    Pour the yolk mixture into the saucepan with the thickened lemon mixture in a thin stream, stirring the ingredients vigorously with a whisk to prevent the yolks from curdling.

    Return the saucepan to low heat and, stirring constantly with a whisk, cook the lemon-egg mixture until it just begins to bubble. Add the butter, cut into pieces.

    Whisk it with a whisk until a smooth cream forms. Remove the saucepan from the heat.

    The lemon curd is ready. Transfer it into a glass jar, let it cool to room temperature, then place it in the refrigerator, covering the jar with a lid. Once fully cooled, the lemon curd will become even thicker.
