
Lemon cake with glaze
Description
The recipe won't take much time. Incredibly aromatic baked goods with a sweet sugar glaze will be perfect with a cup of unsweetened coffee, tea, warm milk, or chilled lemonade. The cake doesn't bake quickly and, moreover, it must cool thoroughly before the glaze is poured over it, but the enjoyment of the dessert's flavor will eclipse all the time spent in the kitchen. Lemon cake doesn't go stale for a week, but it's unlikely to stay on the plate that whole time — it will disappear in an instant. Serve it cooled or slightly warm.

Prepare the listed ingredients. Choose slightly sour kefir, not fresh, but 2–3 days old, so that it reacts well with the leavening agent and makes the dough rise.

Add the sugar and salt to a salad bowl or deep dish. Add vanilla sugar and whisk everything thoroughly for 3‑4 minutes.

Pour in the kefir and beat everything again, so that the sugar dissolves thoroughly. You can also add other sweet seasonings, spices.

Blanch the lemons with boiling water and scrape off the zest. Use 1 large lemon or 2‑3 small ones. Then squeeze the juice from them and place everything into a bowl. Melt the butter and pour it into the container with the lemon zest and juice, stir.

Pour the lemon oil into the egg mixture, stir, and add the premium wheat flour with leavening agent in portions. Fold it into the batter slowly, so that no lumps form.

Line the baking pan with parchment paper and brush it with vegetable oil. Pour in the prepared batter. Preheat the oven to 200 degrees and place the pan on the middle rack of the oven.

Bake the lemon cake for about 20 minutes at 200 °C, then lower the temperature to 160 °C and bake for another 20–25 minutes until a dry wooden skewer comes out clean. At the end of cooking, insert the skewer into the middle of the cake and check the doneness.

Remove the cake from the oven and the pan and let it cool in the cold for at least 1 hour, or even longer! Mix 1 tbsp of kefir and powdered sugar in a bowl. Add the powdered sugar in batches, whisking it in.

Dust the cake with powdered sugar and drizzle icing on top. Let it sit for 20–30 minutes for the icing to set.
