
Lemon cheesecake

This recipe won't take much time. I've never met anyone who doesn't love a well-made cheesecake. Unfortunately, what's served in most of our cafes is merely a poor imitation. Of course, there are many cheesecake recipes—cheesecakes come in various forms—but in my opinion, this lemon cheesecake recipe, shared with me by a family friend who works as a pastry chef, is the best. I've prepared it many times, and it has never failed me. So, if you want to learn how to make a lemon cheesecake, I highly recommend this fundamental recipe, which is crafted, as they say, "by the book." Serve it warm or chilled. It's perfect with tea.

Prepare a strainer or colander.

Place the sieve over a pot and cover it with gauze or a towel. Put the cheese on top. Let the excess liquid drain from the cheese.

In a bowl, mix the butter, vanilla sugar, and regular sugar.

Thoroughly mix and add 4 egg yolks.

Mix well and add potato starch.

Now pour freshly squeezed lemon juice into the cup.

And add the lemon zest.

Beat the egg white and add it to the cup with the prepared mixture. Mix well.

Pour the prepared mixture into a baking pan. Bake the lemon cheesecake in a preheated oven at 170 degrees for 40 minutes. Then remove it and let the cheesecake cool for about 15–20 minutes.

Dust the ready golden lemon cheesecake with powdered sugar. Serve with your favorite berries or garnish with them.
