
Lemon Syrniki
Description
Cottage cheese pancakes with light citrus notes. Fluffy and tender, yet they hold their shape well and do not spread out in the pan. These pancakes can be served on their own or with various toppings: sour cream, honey, sweetened condensed milk, jam, or preserves. You can use absolutely any cottage cheese.

Prepare all the ingredients.

Rub the cottage cheese through a sieve or mash it well with a spoon.

Add semolina, sugar, salt, egg, turmeric, and lemon zest.

Mix thoroughly and leave for 4 hours, or overnight.

Sprinkle the work surface with flour. For convenience, divide the mixture into two parts and shape each into a log.

Cut into pieces, lightly press each one with your hand, and coat both sides in flour.

Fry in vegetable oil over medium heat on both sides until golden brown.
