Homemade baked goods for tea. I used dry instant yeast in the recipe; if needed, you can replace them with fresh yeast, 20 g.

Prepare all the ingredients right away. Heat the milk in a saucepan over low heat to 35–37 degrees.

Pour warm milk into a bowl, add butter melted over low heat, sugar, and salt, then crack in an egg. Whisk everything together.

Grate the zest of a large lemon on a fine grater and squeeze out the juice. I ended up with about 80 ml.

Pour the lemon juice and add the zest to the bowl with the milk mixture, then stir.

Sift the flour into this mixture and add the dry yeast. First mix the ingredients with a spoon, then knead with your hands.

You should end up with soft dough that does not stick to your hands. Shape it into a ball in the bowl, cover with a kitchen towel, and leave it undisturbed for 1 hour.

After an hour, the dough has noticeably increased in volume and is ready for the next step.

Separate pieces weighing about 50 grams from the total mass of dough. Roll each piece into a ball and press a hole in it with your finger, as in the photo.

In a saucepan, heat a generous amount of vegetable oil over medium heat and fry the doughnuts in batches, turning them until they are an appetizing golden brown on all sides. When done, transfer the doughnuts to a kitchen towel first to absorb excess oil.

Then serve the finished lemon doughnuts at the table, lightly dusting them with powdered sugar.
