
Lemon cookies with pine nuts

Step 1

1. Preheat the oven to 175 degrees and grease a 22x32 cm baking pan. Prepare the dough. Sift powdered sugar into the bowl of a food processor. Add flour, butter, and pine nuts, and mix at low speed until a uniform dough forms. Press the dough evenly into the prepared pan. Cover the dough with parchment paper and fill with dried beans. Bake until deeply golden, about 25–35 minutes. While the crust is baking, prepare the filling. Sift flour into a bowl and mix with sugar. Add lemon juice and lemon zest, stirring until the sugar dissolves.

2. In a separate bowl, beat all the eggs and egg yolks with salt. Add the eggs to the lemon mixture and beat until smooth. Once the crust is baked, remove the parchment paper with the weight and pour the filling onto the crust. Reduce the oven temperature to 150 degrees and bake until the filling thickens, approximately 30-40 minutes.

3. Let cool in the pan, then cover with a lid and refrigerate before cutting. Cut into squares and dust with powdered sugar on top, if desired. The bars will keep in an airtight container or in the refrigerator for up to 4 days.
