Description

Let's prepare lemon meringue cookies at home. We'll make it in three stages. First, prepare the dough and bake it in the oven. Then, make the lemon filling, and finally, prepare the fluffy meringue. Combine the three components in a baking pan and bake in the oven for 25 minutes. The finished cookie should be refrigerated for 2 hours (before serving). Good luck!

    Sift the flour and mix with powdered sugar, add 100 grams of soft butter. Knead the dough. Then add the egg yolk and 1 tablespoon of water. Roll the dough into a ball and place in the refrigerator for half an hour.

    Remove the dough from the refrigerator and roll it out into a thin sheet, sized to fit your pan. Place the dough into the pan, smoothing the edges. Prick several times with a fork.

    Bake the dough in the oven for 20-25 minutes at 180 degrees. Then cool to room temperature. Meanwhile, squeeze the juice from the lemons.

    Grate the zest on a fine grater. Mix lemon juice with starch, stirring with a spatula until smooth.

    Pour 250 ml of water and lemon juice with starch into a saucepan. Place over heat and bring to a boil, stirring constantly. Add: 3 egg yolks, vanilla to taste, lemon zest, sugar, and 100 grams of butter. Bring to a boil again and cook until thickened (the consistency should be like pastry cream). Let the mixture cool, then pour it over the dough.

    Prepare the meringue. Mix 4 egg whites, a pinch of salt, and 3 tablespoons of powdered sugar. Beat until thick and fluffy, then pour over the lemon filling.

    Place the pan with the future baked goods into a preheated oven at 200 degrees for 20-25 minutes.
