
Lemon pancakes
Description
The recipe won't take much time. This recipe yields 8 flatbreads. The baked goods are ready. Serve at the table.

1. Finely grate the zest and squeeze the juice from 2 lemons. Cut the butter into cubes. Beat the egg in a bowl and set aside. Preheat the oven to 425 degrees, placing the oven rack in the center. Add flour, sugar, baking powder, salt, and lemon zest to the bowl of a food processor. Mix the ingredients 5 or 6 times. Add the pieces of butter and process another 5–6 times, until the butter is broken down and the mixture resembles crumbs. Add the cream and mix until just combined.

2. Place the dough on a lightly floured surface and knead slightly. Shape the dough into a circle about 17-20 cm in diameter.

3. Using a sharp knife or pastry cutter, cut the dough into eight equal slices and place them on a baking sheet lined with parchment paper. Lightly brush the tops of the slices with beaten egg.

4. Pour lemon juice over each slice. Sprinkle each pancake with about 1 teaspoon of sugar.

5. Bake the flatbreads for 14-16 minutes, until golden brown. Let cool on a rack for 5-10 minutes before serving. Serve warm.
