
Lemon cupcakes
Description
We will decorate the cupcakes with cheese cream! You can use any of the suggested cheeses: mascarpone, ricotta, Philadelphia, or another cream cheese. The decorative elements for the piglets will be made from simple white‑pink marshmallow; you can also use marshmallows. Here everything is up to your imagination.

Prepare all the necessary ingredients.

In a bowl, beat the softened butter with the sugar, then add the eggs one at a time. After each egg, beat the mixture thoroughly.

Then add the milk, zest of half a lemon, 2 tbsp lemon juice. Whisk everything on low speed of the mixer.

Sift the flour with the leavening agent and gradually incorporate it into the prepared mixture. The result should be a silky dough with a sour‑cream‑like consistency.

Grease the molds with vegetable oil, fill them to two‑thirds of their volume with the batter. I got 14 cupcakes. Bake at 180 °C for 25–30 minutes.

While the cupcakes are baking, prepare the cream. Beat the cheese with powdered sugar and a single drop of red coloring. Adjust the powdered sugar to your taste. Cover the finished cream with a lid and place it in the refrigerator.

Our cupcakes are ready! Let them cool completely, then you can remove them from the tin or however is most convenient for you.

While the cupcakes are cooling, you can prepare this kind of marshmallow pig decoration. Slice the marshmallows with a sharp knife into thin slices and cut out the needed elements: heels and ears. For the eyes I used candy beads; you can use chocolate drops. The mouth can be drawn with a food marker or omitted! Also prepare the piping tip and a bag for the cream.

Pipe the cream onto fully cooled cupcakes and decorate with garnish.
