Prepare all the ingredients.

Wash the lemon thoroughly and grate the zest from it. Cut the vanilla pod lengthwise in half and carefully scrape out the seeds with a knife.

Squeeze the juice from the lemon and strain it to remove the pulp.

In a deep bowl, mix coconut cream, cashew butter, maple syrup, lemon juice, and zest with vanilla using a mixer.

Taste the resulting mixture. Add more sweetness or sourness if necessary.

Transfer the mixture to a food container, cover with a lid, and place in the freezer for 1 hour.
