1. In a medium bowl, mix together flour, baking powder, cinnamon, and salt. In a large bowl, beat butter, granulated sugar, and brown sugar with a mixer at medium speed until light and fluffy. Add egg, vanilla, and zest. Gradually add the flour mixture, switching the mixer to low speed, until well combined. Divide the dough in half and roll into rounds; wrap tightly and refrigerate until firm (about 1 hour).

2. Preheat the oven to 160°C (325°F). Line two baking sheets with parchment paper.

3. Roll out the dough one by one between sheets of parchment paper to a thickness of 0.3 cm. Use special cutters to press out shaped cookies from the dough sheet and place them onto prepared baking sheets. Chill until firm (about 15 minutes).

4. Keep in the oven until the edges are golden brown (12 to 15 minutes). Place on a wire rack and let cool completely.

5. Meanwhile, beat water and dry egg white on low speed until the water is fully absorbed (about 2 minutes). Add lemon juice and gradually add powdered sugar until the mixture becomes thick but not dry. Add food coloring if desired and beat for another 1 minute. Decorate the cookies with the resulting icing.
