
Lemon-Poppy Seed Muffins
Description
Perfect with tea and coffee. Our muffins will have a faint lemon tang. These lemon‑poppy seed muffins are not difficult to make, even interesting. Try them, and you’ll like both the process and the result. Serve cooled or slightly warm.

1. In a separate bowl, mix the following ingredients – flour, baking powder, soda, salt, poppy seeds. Mix everything together. You’ll end up with a dry mixture.

2. For the liquid mixture we will need a different bowl. Melt the butter. Add the sugar to it and beat with a mixer until the mixture whitens. Beat in 1 egg and mix with the mixer. Then beat in the second egg and mix again.

3. Place the lemon in boiling water for about five minutes. It will become more fragrant. Grate the peel on a fine grater into zest. Add the zest to the liquid mixture. Pour in the yogurt and the dry mixture. Stir quickly and beat with a mixer. The batter for our muffins is ready.

4. Prepare a muffin tin. If you have paper liners, place them in the tin. If not, grease the tin itself. Fill each liner with batter to the top.

5. The muffins are baked in the oven for about 30 minutes. The oven should be preheated to 190 degrees. Mix 3 tablespoons of lemon juice with powdered sugar and brush the warm muffins with this syrup.
