
Lemon paste with cheese and spinach

I'll say it right away, you won't be satisfied with just one portion of this pasta... It turns out juicy, rich, and aromatic. A heavy sauce is definitely not what this dish is about! We'll make a light sauce based on wine, lemons, and spinach. And add the final touch—Parmesan cheese.

Boil the pasta in a large pot. While the pasta is cooking, prepare the sauce. Melt the butter in a skillet and sauté the flour until it develops a light nutty aroma and turns golden, stirring constantly.

Pour in the white wine, mix and reduce by half.

Grate the zest of two lemons directly into the pan.

Squeeze the lemon juice into the same pan. Add salt and cook for a couple of minutes, stirring.

Add half a cup of pasta water, add the spinach, and heat for a couple of minutes. If you're using fresh spinach, let it wilt and reduce in volume.

Add the capers without brine and generously season the contents of the pan with pepper.

Add half of the "parmesan," grated on a fine grater. Mix well.

Place the cooked pasta in the pan and mix. If necessary, add another half cup of the water in which the pasta was boiled.
