
Lezgin pie with meat and potatoes
Description
The recipe won't take much time. If you are a fan of Caucasian cuisine or simply want to make a delicious meat and potato pie, I wholeheartedly recommend trying the Lezgin pie "Tskan." Prepare the ingredients.

Pour water into a bowl for kneading the dough, add salt, sugar, and vegetable oil. Add the flour and knead the dough. It will be quite firm.

Wrap the dough in plastic wrap for about 30 minutes.

While the dough is "resting," prepare the filling. Finely chop the meat and onion.

Slice the potatoes into thin slices, season with salt and pepper, add thyme, and mix.

Divide the dough into 4 parts: two larger parts and two smaller parts.

Roll out the dough into a very thin flatbread and brush it with melted butter.

Roll the dough into a log, and then into a "snail".

Do the same with all pieces of dough. Cover the dough with plastic wrap for about 20 minutes.

Roll the dough out again into a sheet, first into a large "snail".

Place the rolled-out sheet of dough on a baking tray, and spread 1/3 of the filling on top.

Do exactly the same with the other two (small) sheets of dough and the filling. Make two more layers of filling.

Finally, roll out the remaining large sheet of dough, seal the edges well, prick it with a fork, and brush it with a mixture of egg yolk and milk.

Bake the pie in the oven at 200 degrees for 1 hour; to prevent it from burning, cover the top of the pie with foil for the last 20 minutes. Check the pie for doneness with a wooden skewer—it should slide easily into the filling.
