1. Start with buckwheat porridge. You need to cook the buckwheat. To do this, rinse the grain thoroughly under water several times, then transfer it to a saucepan, pour in 2 cups of water, and add salt. Cook for about 20 minutes until done.

2. While the buckwheat porridge is cooking, it's time to prepare the fish. I rinse the bream under running water, remove the scales, and rinse it again to get rid of any remaining scale residues. Then I make an incision from the fish's head to its tail and remove all the innards. I rinse it once more under water and gently dry it with a paper kitchen towel. I season the fish with salt and pepper both inside and outside.

3. The buckwheat porridge is still cooking, the bream is prepared, and all that's left is to fry the onion. To do this, I peel the onion, rinse it, and chop it into small cubes. Then I place the chopped onion into a frying pan. First, I pour a little vegetable oil into the pan, then begin frying the onion evenly on both sides until golden brown.

4. The fish filling is almost ready; all that's left is to combine the cooked buckwheat porridge with the sautéed onions. Mix well and, if desired, add spices.

5. While the filling is cooling, I turn on the oven and heat it to 200 degrees. Then I start stuffing the fish: I transfer all the filling into the bream's belly. I secure the belly well with toothpicks so the filling doesn't fall out. Then I place a sheet of foil on a baking tray and put the stuffed fish onto it. I salt it well and wrap it tightly in foil.

6. Place the baking sheet with the fish in the oven and bake for about 1 hour. Baking time greatly depends on the size of the fish. Once the fish is fully cooked, serve it immediately.
