
Cheese flatbreads on kefir cooked in a pan
Description
Perfectly pairs with tea and coffee. Choose a hard cheese that melts well for the filling. You can also add garlic to the cheese and fresh herbs filling, if desired. These flatbreads are great served with any dish, or can be enjoyed as a standalone snack for a quick bite. Serve cooled or slightly warm.

Prepare all the ingredients before you start cooking. Rinse the fresh parsley in cold water.

Pour kefir into a bowl and add baking soda and salt. Mix these ingredients with a whisk.

Sift the flour into the kefir mixture.

Knead the dough until it is no longer sticky to the hands. The amount of flour listed in the ingredients is approximate—it may require a little more or less to achieve the desired dough consistency. Shape the dough into a ball, place it in a food-grade plastic bag, and let it rest on the counter for 20–30 minutes.

Then divide the dough into several parts; I divided it into 6 parts, each weighing approximately 130 grams.

Grate the cheese on a coarse grater.

In a bowl, combine the grated cheese with finely chopped parsley, mix well.

Dust the work surface lightly with flour and roll out a portion of the dough into a thin round shape using a rolling pin. Place 2 tablespoons of the cheese mixture in the center.

Pull up the edges of the dough and pinch them together with your fingers to form a pouch with the cheese filling inside.

Carefully roll out this pouch with the cheese filling into a flat pancake using a rolling pin, as shown in the photo.

Heat a dry skillet over medium heat and place this flatbread on it—cook on both sides until golden brown spots appear. Prepare all the dough and cheese portions this way, then fry them on a dry skillet.

Place the ready cheese flatbreads on a plate in a stack, greasing each one with a piece of butter, and serve.
