Step 1

1. Preheat the oven to 230 degrees and place the baking sheet on the middle rack. Mix flour, baking powder, and salt in a bowl. Make a well in the center, then add water and oil. Gradually stir the mixture with a wooden spoon. Knead the dough on a work surface about 4 or 5 times. The dough will be quite greasy and oily.

Step 2

2. Divide the dough into 4 parts and roll out each part on a sheet of parchment paper into long, irregularly shaped flatbreads, approximately 15x30 cm. The flatbreads should be quite thin. Place the flatbreads, along with the parchment paper, onto a preheated baking sheet. Bake for about 5 minutes, until slightly golden. Remove the baking sheet from the oven and quickly sprinkle each flatbread with 1/4 of the grated cheese. Bake for another 3 to 4 minutes, until the edges turn brown. Take the flatbreads out of the oven and immediately brush them with honey, sprinkle with sea salt, and garnish with thyme leaves. Use about 1 tablespoon per flatbread, but you can use more—this will only make them tastier.

Step 3

3. Cut each flatbread into 4 pieces with a sharp knife. Serve the flatbreads warm. If you want to prepare the flatbreads in advance, bake them with the cheese for about 1 minute less than required. Shortly before serving, place them back in the oven, then brush with honey and sprinkle with sea salt and thyme.
