
Flatbreads with chicken, spinach, and Brie cheese
Description
Homemade baked treats for tea. Flatbreads with chicken filling, bananas, and a smoky barbecue sauce flavor—unusual snack for a summer picnic. Can be served with tea or coffee.

Step 1

1. Preheat the oven to 200 degrees. Line a baking sheet with foil and spray with cooking oil. Place the bananas in a single layer on the baking sheet. Bake for 20–30 minutes, until golden with dark brown edges. Remove from the oven and let cool slightly. Once the bananas have cooled, slice them into pieces and set aside until ready to use. Season each piece of chicken with garlic salt and cayenne pepper on both sides.

2. Place on a preheated grill rack and cook until done on both sides. During the last 5 minutes of cooking, baste the chicken with barbecue sauce on both sides. Remove from the grill and slice the chicken meat into thin strips.

3. Place the flatbreads on a working surface. Add herbs and spinach leaves. Top with several pieces of chicken, slices of Brie cheese, and banana slices. Optionally drizzle with barbecue sauce if desired.

4. Roll up the flatbread and place it on a baking sheet seam side down. Bake in the oven at 200 degrees Celsius for 3 to 5 minutes, until the cheese melts. Remove from the oven, cut in half, and serve.
