
Potato and Cheese Flatbreads
Description
Perfectly suited for tea and coffee. Potatoes are used here in a small amount to bind the filling well. As for the cheese, it’s better to take a larger amount. I recommend combining hard and soft cheese, then the filling will be rich in flavors and have a soft texture. Moreover, you can always diversify the filling with herbs or spices, for example. Serve it cooled or slightly warm.

1. First, wash the potatoes and put them to boil directly in their skins.

2. To make the dough, combine warm water, butter, salt and sugar, flour and yeast. Knead a soft dough (if you have a machine handy, you can entrust this process to it) and let it rise in a warm place.

3. Let the cooked potatoes cool and peel them.

4. Grate the hard cheese using a large or medium grater.

5. Also grate the potatoes.

6. Add soft cheese. Ideally, in my opinion, feta or brynza would be perfect.

7. Divide the dough into 5‑6 equal parts.

9. Thoroughly mix the cheese‑potato filling, divide it into 5–6 portions. Roll each into a firm ball and place it in the center of the dough sheet.

10. Gather the edges and pinch them together.

11. Gently roll it out until a flatbread forms.

12. Place on a dry skillet and fry over medium heat on both sides until golden brown.
