
Whey Flatbreads
Description
The recipe won’t take long. It’s the combination of whey and baking soda that makes the flatbreads very fluffy and keeps them soft for a long time. This is a basic recipe; if you like, you can make these flatbreads with a filling—potato, cheese, mushrooms, cottage cheese, or greens work wonderfully. Serve warm or chilled. Perfect with tea.

Prepare the ingredients you need for the flatbreads.

Heat the whey in a double boiler or in a microwave until warm, add baking soda, sugar, and salt, and mix thoroughly.

After a few minutes the whey will react with the baking soda, and a thick, fluffy foam will form on the surface.

Sift the flour through a sieve, add it to the whey in small portions while stirring constantly.

When all the flour has been added, knead a thick, soft dough by hand. You can brush the top of the dough with vegetable oil so it does not stick to your palms. Cover the dough with a tea towel and let it rest for 30 minutes.

Then divide the dough into 4–6 equal parts.

From each piece, roll a round ball. Sprinkle the board with flour. Roll the dough balls into a flat disc 0.5 cm thick.

Heat the frying pan, lightly grease the surface with oil, and place the dough disk on top. Pierce the top several times with a fork. Fry the flatbreads over low heat under a lid. When large bubbles form on the surface, flip each flatbread to the other side.

Fry the flatbreads until they are golden brown on top. Fry the remaining pieces the same way.

After frying, place the food on a paper towel so it absorbs the excess oil.

Serve the flatbread warm at the table.
