These are simple flatbreads cooked on a skillet, easy enough for even an inexperienced cook to prepare. If desired, you can enhance them not only with interesting spices but also with cheese, herbs, or a meat filling. The key is using an easy-to-make dough, which allows for plenty of creative variations. Serve cooled or slightly warm.

    1. The recipe for making flatbread on a skillet is quite simple. First, you need to prepare the dough. To do this, mix 2 cups of flour, salt, sugar, baking soda, and an egg. Then add kefir and mix thoroughly. Gradually add flour as needed to knead a firm dough. The dough should be elastic and soft, and may slightly stick to your hands. Divide the dough into portions (you can roll it into a log and carefully cut it with a knife).

    2. Now each portion of dough needs to be rolled out thinly to the size of the pan on which the flatbread will be cooked. Both sides should be lightly dusted with flour.

    3. Place the pancake on a dry, well-heated skillet, preferably non-stick. Set over medium heat and cook for about 2-3 minutes. There's no need to cover the skillet with a lid.

    5. All the remaining pancakes should be fried in the same way. If desired, the cooked pancakes can be brushed with butter while still on the skillet at home. Also, while still hot, they can be sprinkled with some grated cheese on top. However, dry pancakes do keep much longer.
