Flatbreads on the Grill

Description

These simple flatbreads are very easy to bake on a grate over hot coals. The dough is elementary, prepared in advance at home, while the flatbreads themselves are baked outdoors in literally a few minutes. The bake turns out crispy on the outside and soft inside, and the light smoky aroma gives it its charm. For the dough, it's best to use a fragrant cheese, such as goat's or homemade. In addition to dried herbs, you can add any fresh greens.

    Prepare all the ingredients.

    In warm water dissolve the yeast, add honey and 1.5 tbsp flour. Mix everything well, cover with plastic wrap, and let the starter sit for 30 minutes in a warm place.

    Then add about half a portion of flour and olive oil.

    Stir and add grated cheese, salt, and Provençal herbs.

    Mix everything once more and, adding the remaining flour in parts, knead a fairly firm dough. Gather it into a ball, coat it all over with butter, cover with plastic wrap and place it in the refrigerator overnight.

    You can let the dough rise in a warm place for a couple of hours, but dough that rests overnight turns out significantly tastier.

    The risen dough should be kneaded and divided into 4 parts. From each part roll out a flatbread, 4‑5 mm thick, then dust the flatbreads well with flour and transfer them onto parchment sheets.

    And now there are several options: 1. You can take the flatbreads with you to a picnic. In a couple of hours (if it’s warm) they will be ready and you can fry them. 2. Let the flatbreads rest for 30 minutes, then freeze them. When you go to the picnic, take them with you. On the way they will thaw and you can fry them immediately. 3. If you’re lucky and you have a barbecue outside, heat the coals and start frying right away. Fry the flatbreads on the grill on both sides for about 1–2 minutes.
