
Flatbreads with filling on kefir
Description
Perfectly pairs with tea and coffee. Knead the dough using kefir, baking soda with sugar and salt, and flour. Then prepare the filling using cottage cheese mixed with egg and herbs. Roll out flatbreads from the dough, place the filling on them, cover with dough so that the filling is enclosed inside, and roll again with a rolling pin. Fry the flatbreads on a skillet. Serve cooled or slightly warm.

Warm the kefir to room temperature. If you have time, simply leave it on the kitchen counter. As a last resort, you can gently heat the kefir in a saucepan. Add baking soda, sugar, and salt to the kefir. Mix thoroughly with a fork, then gradually add flour. Knead the dough until it becomes non-sticky.

Shape the kneaded dough into a ball and place it in a deep plate. Cover the plate with plastic wrap. Let the dough rest at room temperature for 30 minutes. If the room is hot, it's better to put the dough in the refrigerator.

Prepare the filling. Mash the cottage cheese firmly with a fork, gradually adding salt. Next, add a raw egg to the cottage cheese and mix thoroughly. Finally, add the prepared herbs (coriander, dill, chopped parsley, and green onion) to the filling. Mix the filling until the mixture becomes uniform.

Form the flatbreads. Place the dough onto a floured work surface. Roll the dough into a thick sausage-like shape and divide it into several equal portions. Roll each piece of dough into a thin flatbread. Place the filling in the center of each flatbread. Use your fingers to lift the edges of the flatbread and bring them together at the top, completely enclosing the filling within the dough. Roll out the formed piece once again to restore its flatbread shape.

Heat a frying pan and add vegetable oil to it. Fry the flatbreads over medium heat until a golden crust forms.

As you can see, making kefir flatbreads is not difficult at all. It's best to serve them hot, although they are also very tasty when slightly cooled!
