First, sift the flour thoroughly. Add salt and dry yeast to a container with warm milk.

Thoroughly rub the granules of dry yeast with your hands until completely dissolved, then gradually add the flour and knead the dough.

Knead the dough until it becomes elastic, then cover it with a towel and place in a warm spot for several hours. During this time, it will rise and double in size.

When the dough has risen, shape it into a log and divide it into three parts. Roll each part into a ball and form it into a flatbread. Make indentations in the center using a special stamp.

Brush the surface of the flatbread with milk, then top with sesame seeds and sumac.

Preheat the baking stone in the oven to 210 degrees and keep the oven at this temperature. Place the flatbread onto the stone and put it in the oven with steam enabled. When the flatbread puffs up and turns golden brown, it will be ready.
