
Flatbread with herbs
Description
In our family, herb flatbread is used instead of bread. Honestly—a fresh, fragrant flatbread with a spicy flavour goes even better with a hot soup than shop bread stuffed with all sorts of rubbish. Flatbread takes no time at all—that’s another plus. And you don’t need any fancy ingredients. In short, it’s a fairy tale rather than mere flatbread :) You can serve it with tea or coffee.

First, dissolve the yeast in warm water. After 5 minutes, add flour, salt, oil, and sugar to the mixture. Knead the dough.

Finely chop the dill and cilantro.

Add greens to the dough and knead again.

Cover the dough with a towel and leave for about 40 minutes—let it rise. At the same time, pick the thyme leaves and beat the egg.

Transfer the risen dough to a work surface dusted with flour.

Divide the dough into approximately 16 pieces.

Roll out each flatbread and place it on a baking sheet dusted with flour.

Brush each flatbread with beaten egg and sprinkle with thyme.

Bake for 10 minutes at 180 degrees, then turn the flatbreads over and bake for another 7–8 minutes. Done!
