
Flourless flatbread in a pan
Description
The bake is quick and easy to prepare. If you follow the Dukan diet, this type of bread can be eaten from the first phase, “Attack.” The flatbread can be used as a base for diet pizza. You can also make a sweet version of it. Serve warm or chilled. Perfect with tea.

To make bread flatbread, prepare the ingredients. Use fat-free kefir. It can be replaced with yogurt or fermented baked milk.

If you use oat bran in flake form, I recommend grinding it to a flour consistency in a coffee grinder.

In a bowl, combine the eggs and kefir. Add the oat bran and gluten. Mix until smooth. The dough will be quite thin. Add the salt and baking soda (leavening agent), and mix.

Leave the dough for a few minutes so it can rest and the bran can absorb the moisture.

If you use a non-stick frying pan, you can do without oil. Otherwise, add a drop of oil to the pan and spread it over the entire surface with a silicone brush. Heat the pan over medium heat.

Pour the oat bran batter into a hot skillet. Cover with a lid and reduce the heat to the lowest setting. Fry the flatbread on the underside for 5 minutes until golden brown. The flatbread will puff up and the surface will be covered with bubbles.

When the surface of the flatbread turns from glossy to matte, carefully flip the flatbread and fry it on the other side for 3 minutes.

The flatbread turns out soft, porous, and moist.

You can finish this flatbread with flax seeds or Herbes de Provence. Cut it into 4 pieces and use it for sandwiches.
