Instructions

Step 1

Heat the milk with starch until thickened, stirring with a spoon. Remove from heat and add butter. Mix well and let the mixture cool. Add sugar, salt, and yeast, then sift in the flour. Knead the dough. Divide it into three parts: one large and two smaller ones. Prepare two containers: in one, mix 15 grams of cocoa with 1 tablespoon of milk, and in the other, mix 5 grams of cocoa with 0.5 tablespoon of milk. Add the cocoa mixtures to the two smaller dough portions, kneading thoroughly by hand. You will get three dough pieces of different colors. Wrap each piece in plastic wrap and refrigerate for 8 hours.

Step 2

Divide each piece of dough into seven equal parts.

Step 3

Roll out a piece of the darkest dough into a thin flatbread. Roll out a slightly lighter piece into a sausage shape and place it on the flatbread, then pinch the edges together.

Step 4

We do the same with the white dough, wrapping it around the darkest sausages. Form multiple multicolored sausages of equal length (matching the size of the mold).

Step 5

Transfer the sausages to a baking dish, arranging them alternately. Shape the bread by hand into the desired form. Cover the dish with a towel and let the dough rise for 1 hour. Brush the bread with egg yolk beaten with cream. Bake in the oven for 45 minutes at 180 degrees.
