
Lazy Adjarian-style cottage cheese khachapuri in a frying pan

Prepare the ingredients listed. For the cheese, choose a brined type: “Suluguni” or “Adjarian”.

Place cottage cheese of any fat content into a deep container. Separate the chicken eggs very carefully into yolks and whites, so as not to break the yolks. Pour 1 egg white into the cottage cheese, add salt, and mash with a fork.

Add top-grade wheat flour to the cottage cheese and mix gently.

Divide the cottage cheese mixture into two equal parts and shape each into boat-shaped pieces. Heat vegetable oil in a skillet and place the pieces in the pan. Lower the heat to moderate and fry on one side for about 2–3 minutes.

Meanwhile, grate the cheese on a fine-hole grater. Flip the khachapuri onto the other side and spread the grated cheese over the browned side, and put the egg yolk in the centre. Cover the pan with a lid and fry for a further 2–3 minutes until the cheese melts and the yolk sets.
