Lazy ratatouille

Description

The recipe won't take much time. Baked vegetables are just as tasty as fresh ones. This lazy ratatouille combines all the ingredients into a vibrant, appetizing, and aromatic dish. It's best served hot, although the cold version is just as delicious. Optionally, add rings of sweet onion. Serve hot.

    1. Make cuts in the eggplants 5-7 mm apart.

    2. Salt inside the cuts and let the eggplants sit for 40 minutes.

    3. Mash the feta cheese with a fork. Add sour cream, vegetable oil, press in the garlic, and mix. Add the finely chopped basil as well. Season with pepper to taste, if desired.

    4. Slice the tomatoes into thin rings.

    5. Grease the baking dish with vegetable oil. Rinse the eggplant under running water and insert tomatoes into all the cuts. Then add the cheese filling into all the cuts. Cover the dish with foil. Bake the ratatouille at 180 degrees.

    6. After 30-35 minutes, remove the foil, sprinkle the vegetables with grated cheese, and return to the oven for 10-15 minutes.
