
Lazy Lavash Pie with Cheese, Potatoes, and Herbs
Description
The bake is prepared simply and quickly. A hearty pie can easily replace dinner, become an excellent Sunday breakfast or a light lunch at work. Make it once and you will love such pies The bake is ready. Serve to the table.

Step 1

Rinse the herbs and dry them well. The selection of herbs is limited only by your preferences. Dill, green onions, and mint work very well in such pies. I also have celery with young stalks and a little parsley. Slice the herbs, but not too finely.

Boil the potatoes in their skins, peel and cool them. Take the cheese out of the refrigerator.

Grate the potatoes and Adyghe cheese on a coarse grater. Grease the grater with butter beforehand so the ingredients won’t stick to it. Combine the potatoes and cheese with herbs, season with salt and pepper, and add paprika.

Cut a circle out of the lavash, the size of the pan. Cut the remaining lavash into 3–4 pieces and arrange them in a removable pan so that the edges hang over and there are 2–3 layers at the bottom. Brush the base with 1 egg.

Spread the filling onto the lavash. Make four indentations and place the yolks in them.

Beat the egg whites with a fork together with sour cream and salt, and pour this mixture over the pie filling.

Fold the edges of the lavash over the filling, cover with a cut‑out circle. Place pieces of butter on top. Bake the pie in a preheated 200 °C oven until the crust is golden and the filling is springy.

Take the finished pie out of the oven and cover it with a towel, without removing it from the pan. After about 10–15 minutes, carefully remove the sides of the pan and transfer the pie to a plate. Serve the pie warm; it is also good when cooled. Serve fresh tomatoes with the pie – very tasty!
